Production: 10 cases
Strawberry sweet tart and tangerine sherbet. High acid.
Clusters de-stemmed into small open-top bins. Free run juice transferred from bins to stainless after a few hours. Wild yeast and malolactic fermentation. Racked off gross lees after four months. No acidulation or other “corrections”. Cold settled, and bottled unfiltered on 5/20/2018.
