Under-ripe strawberry and raspberry, red plum, and bean sprout. Fine, creamy bubbles. Not disgorged, so there will be sediment (lees). Recommend serving at 38–42 °F.
Foot stomped at harvest. Wild yeast and malolactic fermentation in open top bin; a small amount was frozen as reserve for later tirage. After five days of skin contact, pressed in combination with Zinfandel pomace. After four months, racked off gross lees and cold settled. No acidulation or other “corrections”. Bottled unfiltered with reserve tirage on 1/27/2018. No dosage, and not disgorged.
