Crème brûlée, orange and lemon zest. Recommend serving at 38–42 °F.
Whole cluster pressed on crémant cycle, taking only the cuvée press fraction. Wild yeast and malolactic fermentation in stainless steel for most of the juice; a small amount was frozen as reserve for later tirage. After four months, racked off gross lees and cold settled. No acidulation or other “corrections”. Bottled unfiltered with reserve tirage on 1/27/2018. Disgorged with zero dosage during the month of February 2019.
