winemaker’s notes
Field blend was foot-stomped and co-fermented into small open-top bins. Wild yeast and malolactic fermentation. Twice daily punch downs. Pressed after four days into small Flextank. Racked off gross lees after four months. No acidulation or other “corrections”. Cold settled, and bottled unfiltered on 3/25/2018.
