Glou glou heaven. Bright, ripe red plum, underripe black cherry, black pepper, wet slate. Recommend serving at 55–60 °F.
Clusters de-stemmed into small open-top bins. Whole berry, wild yeast and malolactic fermentation. Twice daily punch downs. Pressed after five days for the Syrah, and four days for the Zinfandel. Mid to late press fractions used. Fermentation finished in small Flextanks. Racked off gross lees after five months. No acidulation or other “corrections”. Cold settled, and bottled unfiltered on 3/25/2018.
