Papaya, mango, lemon blossom, and lime. Bright acidity. Recommend serving at 40-48 °F. Best to drink over multiple days for development.
Whole cluster pressed on crémant cycle, taking taille and partial cuvée press fractions. Wild yeast and malolactic fermentation in stainless steel. After four months, racked off gross lees and cold settled. No acidulation or other “corrections”. Bottled unfiltered on 1/28/2018.
