When first opened, flinty and slightly spritzy. Slate, cranberry and nectarine. Crisp mouthfeel.
winemaker’s notes
Whole cluster pressed on crémant cycle, taking only the later press fraction. Wild yeast and malolactic fermentation in stainless steel. After three months, racked off gross lees and cold settled. No acidulation or other “corrections”. Bottled unfiltered on February 9, 2019. Wine underwent some bottle fermentation, resulting in a slight spritz and reduction.
