tasting notes
Lime, meyer lemon, grapefruit blossom, and granite. Recommend serving at 38–42 °F.
winemaker’s notes
Whole cluster pressed on crémant cycle, taking only the cuvée press fraction. Wild yeast and malolactic fermentation in stainless steel for most of the juice; a small amount was frozen as reserve for later tirage. After three months, racked off gross lees and cold settled. No acidulation or other “corrections”. Bottled unfiltered with reserve tirage on January 20, 2019. Disgorged with zero dosage during the fall months of 2019.
