tasting notes
Tangerine, lemon blossom, lime, and cut hay. Recommend serving at 40-45 °F. Best to drink over multiple days for development.

winemaker’s notes
Whole cluster pressed on crémant cycle, taking taille and partial cuvée press fractions. Wild yeast and malolactic fermentation in stainless steel. Racked off gross lees after 45 days, then cold settled another 45 days later. No acidulation or other “corrections”. Bottled unfiltered on 2/9/2019.
