Dry, rosé wine. Peach, strawberry, and cherry. Great balance. Full bodied and round on the initial taste, but finishes with a crisp swallow and mild astringency. A Sangiovese and Grenache blend from Dulzura, San Diego County made using only wild yeasts, unfiltered, and with minimal intervention.

Wild Yeast and Malolactic
Peach, strawberry, and cherry. Great balance. Full bodied and round on the initial taste, but finishes with a crisp swallow and mild astringency.
Whole cluster pressed on crémant cycle, taking only the later press fraction. Wild yeast and malolactic fermentation in stainless steel. After five months, racked off gross lees and cold settled. No acidulation or other “corrections”. Bottled unfiltered on March 1, 2020.
