Wild Yeast and Malolactic
Jasmine, green apple, pear, limestone, hint of petrol. Medium bodied with balanced acidity, and a dry finish.
Whole cluster pressed on crémant cycle, taking only the later press fraction. Wild yeast and malolactic fermentation in stainless steel. After five months, racked off gross lees and cold settled. No acidulation or other “corrections”. Bottled unfiltered on March 1, 2020.
