73% Sangiovese, 27% Grenache

Grenache harvested August 25, 2020. Gentle, slow, whole-cluster press as for Champagne, taking only the taille portion to stainless tank. Sangiovese harvested August 26, 2020. Foot-stomped and rested for three hours until pressing as with the Grenache. All spontaneous fermentations. Months after fermentations complete, wine racked, chilled, and sulfited in December, 2020. Bottled February 21, 2021.
