tasting notes
Nectarine, underripe plum, charcoal, and rose. Fine, frizzante bubbles. Brut Nature.

winemaker’s notes
Grenache harvested August 25, 2020. Gentle, slow, whole-cluster press as for Champagne, taking only the cuvee portion to stainless steel Charmat tank, and sealed so wine would naturally carbonate during fermentation. All spontaneous fermentations. Sangiovese harvested August 26, 2020. Foot-stomped and rested for three hours until pressing as with the Grenache, then added to Charmat tank. Months after fermentations complete, wine chilled and sulfited. Bottled on December 26, 2020.

A sibling to the still rosé Clara (same harvest, different press cut and vinting).
