The return of one of the most awesome pairing events we’ve ever had!
Last year, Barracruda put out a stunning trio of Bluefin Tartare, Seared Bluefin Taco, and a Bluefin Tostada, all from the same piece of fresh caught fish. It was a. maze. ing.
This year will also be amazing, but we are switching to a three-course dinner!
Course I — Crema de Elote y Poblano
Velvety roasted corn and poblano crema finished with toasted pepitas, blue corn totopos, ancho chile dust, queso fresco, and smoky morita chile oil.
Paired with: 2020 Rainfall (Sparkling, Dry Riesling) – Crisp and aromatic; balances the crema’s smoky richness and brightens the roasted poblano.
Course II — Tuna Poke Tostada
Crispy corn tostada topped with mango, jícama, cucumber, green onion, and cilantro. Finished with charred hibiscus salsa and kimchi nori salsa macha aioli.
Paired with: 2022 Encounter (Skin-Contact Sauvignon Blanc) – Textural, citrusy, and herbaceous; complements the tostada’s brightness, hibiscus tang, and salsa macha heat.
Course III — Tetela de Cordero con Mole de la Tierra
Stone-ground masa tetela filled with braised lamb, served over a deep, ash-infused mole. Finished with traditional jocoque and toasted sesame.
Paired with: 2021 Darkstar (Sparkling Red Blend) – Bold, earthy, and effervescent; lifts the richness of braised lamb while standing up to the mole’s smoke and spice.
