Orange blossom, Hawaiian roll, ripe pear, and green apple. Extra Dry. Creamy bubbles.

winemaker’s notes
Harvested September 5-6, 2019. Whole-cluster pressed at harvest, cuvee portion placed in Charmat tank. All spontaneous fermentations. Tank sealed a few days later so wine would naturally carbonate as fermentation finished. Months after fermentations complete, wine chilled and sulfited before bottling in late June of 2020.

nota bene
The wine was intended to be an extra brut rosé, but nature decided otherwise. Before it was labeled, our mother passed to Covid, and one of her favorite sayings was, “Whoa Jake!”, when something surprising happened (she never could explain where the “Jake” part came from), so we felt it was an appropriate name. That’s her Photoshopped to the handboard surfer.
