tasting notes
Black cherry, blackberry, tart plum, and red apple skin. Brut. Creamy bubbles.

winemaker’s notes
Grapes harvested and destemmed between 9/15 and 10/5 of 2021. Syrah and Petite Sirah were crushed; Nebbiolo and Zinfandel were not. Small amounts of juice drawn off and kept chilled to form a sweet reserve for later tirage. All spontaneous fermentations. Grapes were pressed on a long, slow cycle in separate lots 7 days after harvest. Cuvee cut and portion of free run transferred to neutral vessel. In June of 2022, wine combined with sweet reserve and transferred into stainless steel Charmat tank, and sealed so wine would naturally carbonate as fermentation finished. After fermentation complete, wine chilled and sulfited at 40 ppm. Bottled in late August of 2022.
