Dried cherries, orange zest, lemon blossom, slate. Fine, creamy bubbles. Brut Nature.
Tempranillo harvested on August 26, 2021. Foot-stomped, then pressed a few hours later. Nebbiolo harvested on September 9, going whole-cluster to press. Gentle, slow, press as for Champagne used for both, taking only the cuvee portion to stainless steel Charmat tank, and sealed so wine would naturally carbonate during fermentation. All spontaneous fermentations. Months after fermentations complete, wine chilled and sulfited (25 ppm). Bottled on May 1, 2022.
A sibling to the still rosé Clara (same harvest, different press cut and vinting).
