winemaker’s notes
Tempranillo harvested on August 11, 2022 and left whole cluster for one day, foot-stomped, and then pressed the next day. Nebbiolo harvested August 26, going whole-cluster to press. Gentle, slow, press as for Champagne used for both, taking only the cuvee portion to stainless steel Charmat tank, and sealed so wine would naturally carbonate during fermentation. All spontaneous fermentations. Months after fermentations complete, wine chilled and sulfited (19 ppm). Bottled on March 17, 2024
