tasting notes
Honeysuckle, popcorn, nectarine skin, kalamansi. Full bodied, but dry.
winemaker’s notes
Viognier and Riesling harvested August 11 and 16, respectively. For each, gentle, slow, whole-cluster press as for Champagne, taking the taille and some late cuvee portions to stainless tank. All spontaneous fermentations. Months after fermentations complete, wine chilled, sulfited and then bottled on April 30, 2023.
nota bene
A sibling to the sparkling Rainfall (same harvest, different press cut and vinting). A great interplay of Viognier and Riesling that both grow more minerally in San Diego County than most other expressions – that’s why it’s Uncharted.
