Honeysuckle, mango, and Fuji apple that drinks in a style more like Sauternes than traditional dessert Muscat. Recommend serving at 38 – 42 degrees Fahrenheit.
Whole-cluster carbonic maceration without CO2 purge in small Flextanks for seven days. Whole-cluster pressed into stainless. Wild yeast fermentation until fortified with 185 proof white brandy when RS near 6%. Aged in stainless. Racked off gross lees, and bottled unfiltered on 3/11/2017.
