tasting notes
Ripe green apple, orange blossoms, jasmine, chalk. Extra Dry.
winemaker’s notes
Viognier harvested on August 27 and Riesling harvested on August 28, 2021. Gentle, slow, whole cluster press as for Champagne, taking only the cuvee portion to stainless steel Charmat tank, and sealed so wine would naturally carbonate during fermentation. All spontaneous fermentations. After fermentations complete, wine chilled and sulfited. Bottled on January 10, 2022.
